Chocolate Chip Cookie Recipe

What you’ll need

Crosby’s Baking Co. Fit Cookie Mix - Base Cookie Mix

2 Medium Eggs

Half Cup (1 stick) Softened Butter, Coconut Oil or Ghee

1 tsp Vanilla Extract

⅓ Cup Chocolate Chips of choice

 

Baking Directions

Heat oven to 360.

Mix 1 Whole egg, 1 Yolk, Butter and Extract in a large bowl with a whisk.

Add dry ingredients and mix until smooth. Then stir in chocolate chips. Chill the dough in your refrigerator for 10-15 minutes.

Scoop out tablespoon sized balls and flatten them a tiny bit on a parchment lined pan. 

Bake at 360 for 10-11 minutes.

 

Pro-Tip: Melt the Butter for a more gooey cookie. Usually, most baking recipes call for a stick of softened butter, but I like to melt the butter beforehand to fully immerse the fat into the flour for a more gooey result. 

Melt enough butter to fill up a half cup (about 9 tablespoons) and then add to the eggs and vanilla. The dough won't be as firm after you mix it completely, so add it to a ziplock bag or container and set in the freezer for a few hours.

Once the dough is firm, tear away tablespoon sized portions and roll them into balls. Flatten them partially on a parchment lined baking sheet and they’re ready to go!
